The Makings of a Pumpkin Muffin.

Here is one of the pumpkins I picked at the farm in Beacon. It is about to get cut and cleaned and put in the oven to make the puree for the muffins. That's right no canned goods here.

Here is the pumpkin out of the oven and scraped.




I only needed one cup of puree.
Oh and I saved the seeds for roasting..yum!

I LOVE strudel toppings. I made this with flour, oats, brown sugar and a little butter.


Fresh out the oven mmmm these smelled so good baking. I couldn't wait for them to cool off so that I could try one.
I couldn't wait one I took one!

A delicious end to the Makings of a Pumpkin Muffin, hope you enjoyed the photos. I am eating this muffin as I type. Moist and the topping is so crunchy...yum!

IT'S FINALLY FALL.......

So earlier this month I picked some cute looking pumpkins to decorate my kitchen with because I love the fall, now I am using them to make a puree for my seasonal pumpkin muffins with strudel topping. The pumpkins are baking right now...pics of the finished product coming soon :-)
