More Cake!

So the other day I got a coconut from the store. I did not know its plans for it yet but I knew I wanted to do something yummy. I decided to make a coconut cake with fresh coconut. First, it's strained of the coconut water, then it's placed in the oven to bake and then cracked open. Shredding the coconut meat reminded me of when I was young and my grandfather used to spend hours in the kitchen shredding coconut and making many, many of his infamous holiday rice puddings for the whole entire family. I watched him and helped him that one time and I was like WOW.

 So, here are the pictures. The cake was delicious and went fast. Funny because it reminded of wedding cake. The fresh coconut was so good and such a difference from using store bought, pre-packaged stuff. The cake was dense and the frosting used was a 7-minute frosting which was super easy to ice. i still have to perfect my cake icing skills but this one looked better than the carrot cake, appearance wise. They will soon be available to the public. Enjoy the pictures.
