HOLIDAY CUPCAKES ARE HERE.......

Yummy Gingerbread Latte cupcakes and chocolaty Peppermint Mocha cupcakes are on rotation for the holiday season. More Cake!

So the other day I got a coconut from the store. I did not know its plans for it yet but I knew I wanted to do something yummy. I decided to make a coconut cake with fresh coconut. First, it's strained of the coconut water, then it's placed in the oven to bake and then cracked open. Shredding the coconut meat reminded me of when I was young and my grandfather used to spend hours in the kitchen shredding coconut and making many, many of his infamous holiday rice puddings for the whole entire family. I watched him and helped him that one time and I was like WOW.

 So, here are the pictures. The cake was delicious and went fast. Funny because it reminded of wedding cake. The fresh coconut was so good and such a difference from using store bought, pre-packaged stuff. The cake was dense and the frosting used was a 7-minute frosting which was super easy to ice. i still have to perfect my cake icing skills but this one looked better than the carrot cake, appearance wise. They will soon be available to the public. Enjoy the pictures.

CAKES!

Ok so the other day I went to the kitchen supply store to buy some cake pans to attempt cakes...layer cakes. I haven't done a layer cake since I was younger and it was only for fun and I remember icing it was sometimes a huge ordeal but I was doing it for fun. Sometimes the cake wouldn't come out of the pan completely and I had to "glue" it together with icing. Wonder if I had any pictures of my first cakes...hmmmmm. Anyway, I tried doing a layer cake (with all the nightmares in my head of OMG I am going to make a huge mess in my kitchen and oven lol) and the cake popped out of the pan fine but icing was another story. I should have iced the middle and placed it in the refrig but I attempted to ice the whole cake in a really hot kitchen...no good. So before I keep writing and this become a novel, here are some pictures. I made my mother's famous holiday carrot cake and it tasted yummy. Presentation....I have to work on.



After some more practice these 8" double layer cakes will be part of our rotation.

The Makings of a Pumpkin Muffin.

Here is one of the pumpkins I picked at the farm in Beacon. It is about to get cut and cleaned and put in the oven to make the puree for the muffins. That's right no canned goods here.

Here is the pumpkin out of the oven and scraped.




I only needed one cup of puree.
Oh and I saved the seeds for roasting..yum!

I LOVE strudel toppings. I made this with flour, oats, brown sugar and a little butter.


Fresh out the oven mmmm these smelled so good baking. I couldn't wait for them to cool off so that I could try one.

IT'S FINALLY FALL.......

So earlier this month I picked some cute looking pumpkins to decorate my kitchen with because I love the fall, now I am using them to make a puree for my seasonal pumpkin muffins with strudel topping. The pumpkins are baking right now...pics of the finished product coming soon :-)

Thanks Allison!! I'm glad they were a hit!!!

These are for a baby shower for a girl. Since it was a Spring theme I went with something light like blueberry lemon, great since blueberries are in season. I made a lemon zest infused buttercream and topped each cake with a chocolate ladybug or daisy.

It was such a beautiful day. Here are some pics of Jacqueline's beach themed wedding. I had fun making these moist vanilla cake with vanilla buttercream tinted aqua blue to match beach theme, 3 designs: piped swirls with candy pearls, hand drawn pearls and shells, and white chocolate shells with crushed graham cracker crust for the "sand".

Cake POP Bouquets are here!

These bouquets are great for parties or just to show someone you care. We will deliver to Beacon (free delivery within the Beacon city limits), Poughkeepsie, Wappingers, and Fishkill. 48 hour notice is needed for orders. Bouquets of one dozen cake pops in your choice or red velvet or chocolate cake and you choose the color of the candy coating. Each one is individually packaged and arranged in a vase. All for $30 (delivery outside Beacon is an additional cost).

Hi Cupcake lovers...

Well I hope everyone had a great Easter. Spring is definitely in the air with this beautiful weather we have been having the past couple days.

Well, we have a few updates May's flavor of the month will be Red Velvet! Yes, buy popular demand and in honor of Mother's Day. Everyone's old favorite Mocha will be showing up this month also. I am also excited about the upcoming article in the Beacon Free Press. Rich Flaherty from the BFP came down to Tas Kafe this past Saturday to interview me about the business a year later. Wow, I can't believe it's been a year already. I have learned so much. Excited to read the article, he wrote such a great article last year.

Sunday, May 15th is the Gardiner Cupcake Festival I do not wanna miss this! If you are a cupcake lover you should not miss this event. It's a huge festival of all things cupcakes.

Baby Shower cupcakes

These are cupcakes for a baby shower. Buttermilk cakes topped with vanilla buttercream tinted pale blue half are topped with a blue chocolate lamb and the other half with toppers and they are all sprinkled with blue dusting sugar for a little sparkle. I love the way these came out.
